Last Elderflower pick! This lot of flowers will be left to sit for a few hours to let the many many insects depart- including some really cute little blue bee-like insects. Then I will strip the flowers from the stems and add them to a sugar syrup, along with the juice of and rind of around 8 lemons. They then infuse for approx to 3 days. Get strained, boiled up, and then bottled. Done! I also "can" them- this means that I will then boil the sealed bottle in a water bath for 10 minutes - this gives them a much greater shelf life- minimum of 1 to 2 years.
