First spring harvest- a lovely bunch of mint!
Mint is going mad at the moment- the first flush of spring growth is happening. Mint really loves it at this time of year- the trees haven't got their leaves yet and the ground is still moist- perfect for the lush new growth. Later in the season as the trees get their leaves and the ground dries out the mint will get taken over by the other taller plants.
So this first lot is popped into the dryer. Plan is to use the dried mint mixed in with other herbs for seasoning. My workshop smells divine! Very fresh and minty!
