Beautiful Yacon!

Beautiful Yacon. Also known as an "Earth Apple".
The tubers of the Yacon plant can be eaten raw, boiled, dehydrated, roasted or processed into beverages, jams, syrup, vinegar, flour, chips and juice.
We ate this good-sized Yacon (pictured) fresh- I left it for a few days for the flavour to intensify and sweeten.
I'm still growing my yacon tuber supply so I've left a few of the smaller tubers and new plants in the ground.
Another "safe" sustainable food source!
