I grow Jerusalem artichokes throughout my food forest. They are a great plant to grow- in summer they grow tall like sunflowers- can reach heights of to 2metres! They grow in clumps, and are a wonderful back drop to your garden. The bees go mad for them!
And the best bit? You can eat them! The edible artichoke bit is the tuber- in winter when the plant dies back, you can dig the tubers up and eat them! Baked, roasted, and my favourite- in soup. Artichoke soup is delicious!
When you have Jerusalem artichokes in the garden you always have a meal available.
