Happy Quince Time!

We've been waiting for the quinces to ripen- and this is the first load.
Quinces are a favorite crop here in the Tinui Food Forest- they get used for Quince Cordial, Quince Paste, and any other quince recipes that come along!
For us, it is all about preserving them so that we can use them throughout the year. So this lot here will be peeled, cored, sliced, and then frozen for later use.
But- the trouble with quinces is that you need to process them asap- if you don't they start to deteriorate really quickly. So I'd better get back to the kitchen and keep going- I'm about half way through!
