Great pears this year!

Started harvesting the pears- around 20kg processed today. It's a bit hard judging when pears are ready- you basically pick them unripe and then let them sit around for a few days to continue to ripen..that way you get a beautifully fragrant luscious pear. Leave them too long though and you get a brown mushy mess.
My plans so far are to make a pear syrup- you get a lovely mix with all the different varieties of pears that we have- I reckon we've got around 20 varieties- don't ask me to name them though!! A pear and ginger jam are on the list too.
If you've got any thoughts on other pear recipes I'm open to suggestions! We've probably only got another 100kgs to go!!
