All Things Elderberry!

We grow lots of elderberry here- not the wild elder that you see growing into trees around the place and around old farm buildings- but a variety called "Canadensis Adams". It grows as a multi-stemmed bush making it easier to harvest from- everything grows within reach.
At this time of year I go out and twice a day make a round of all the bushes. Once in the early morning and then later in the evening. It's a really peaceful way to start and finish the day. My harvesting at the moment is the berries. They are just starting to ripen now. you can tell they are ripe when the berries are a dark colour and the bunch has a droop to it..guessing that the weight of the berries makes it heavier.
I freeze the berries in batches and then when I have enough I will use them to make Elderberry Syrup. I haven't made a batch this year as yet, and last years syrups are all gone- so really looking forward to making some.
Elderberry syrup is know for its anti-viral properties- I love taking a tablespoon or two in winter when I feel I need the boost.
